(ご参考にThe American Heritage Dictionary of the English Languageからの引用を記載しているので参考にされたい。)

For this was sent on Seynt Valentyne's day
When every fowl cometh her to choose his mates

The American Heritage Dictionary of the EnglishLanguageからの引用です。
valentine (noun)
1. A sentimental or humorous greeting card sent to a sweetheart, friend, or family member, for example, on Saint Valentine's Day. A gift sent as token of love to one's sweetheart on Saint Valentine's Day.
2. A person singled out especially as one's sweetheart on Saint Valentine's Day.

Valentine
Saint fl. third century A.D. Roman Christian who according to tradition was martyred during the persecution of Christians by Emperor Claudius Ⅱ. Another martyr named Valentine, who was bishop of Terni, a region in present-day central Italy, has also been suggested as the aspiration for our modern feast of Saint Valentine's Day.

Word History
Geoffrey Chaucer should perhaps receive honor as the real Saint Valentine. Although reference books abound with mention of Roman festivals from which Valentine's Day -the day for lovers- may be derived, Jack B. Oruch has shown that Chaucer is most likely the first to link the saint's day with the custom of choosing sweethearts. No link between the day and lovers exists before the time of Chaucer and several literary contemporaries who also mention it, but after them the link become widespread, a circumstance that makes it seem likely that Chaucer, the most imaginative of the group, invented the tradition. The fullest and perhaps earliest description of the tradition occurs in Chaucer's

Parlement of Foules, composed around 1380, which takes place "on Seynt Valentynes day,/What every foul cometh there to choose his mate"

Geoffrey Chaucer (1340?-1400)
English poet regarded as the greatest literary figure of medieval England. His works include The book of Duchess (1369), Troilus and Criseyde (c. 1385), and his masterwork, The Canterbury Tales (1387-1400).
